5 Healthy Instant Pot Party Recipes

5 Healthy Instant Pot Party Recipes | This Miss Cooks

One of my very favorite Cyber Monday purchases from about 2 years back is definitely the Instant Pot. In fact, I think it’s the only bigger item I’ve ever gotten on this most hallowed of shopping-on-your-lunch-break days. I know, shocking that I splurge a little on food-related things! I have yet to regret getting one, even if it’s a bit of a pain to find a spot to store it in my tiny apartment.

Since this handy little gadget has kept going on sale every year around this time, I figured I’d share my favorite time and energy saving Instant Pot recipes. In the spirit of the season — and not becoming a total hermit — I’ve also been trying to plan a few dinner parties with friends.

Without further ado, here are my favorite Instant Pot party recipes that are perfect for feeding a (picky) crowd!

8 Best Vegan Thanksgiving Side Dishes

8 Best Vegan Thanksgiving Side Dishes | This Miss Cooks

Okay, so I may have somewhat impulsively planned an impromptu Friendsgiving dinner for Saturday. As in a full Thanksgiving spread 2 days from this moment. I was a glass of wine into my weekly dinner party and thinking about just how much I love stuffing (hint: it’s a lot). Before I knew it, I was telling a roomful of my dearest friends to be there or be square, turkey and all. The thing is, many of my guests are vegetarian, vegan or dairy-free. So, a vegan Friendsgiving it will (partially) be!

So of course I woke up this morning and furiously combed the internet and my own recipe stash for the tastiest vegan Thanksgiving side dishes. On the bright side, this does mean that I’ll be getting a significantly smaller bird. On the other hand, I’m going to need to get extra creative with juggling oven and stove space.

And of course Mr Never Cooks asks SPECIFICALLY for ‘meaty stuffing’ so I know there will be some dishes I’ll need to duplicate. Shouldn’t be too hard, right?!

Weekly Menu Planner & Grocery List Printable

Menu planning. Precision grocery shopping. Meal prep Sunday. Those are some of my favorite weekend rituals that carry me through a healthy (and sane) week. At this point,I’ve gotten it all down to a science at this point so that I don’t waste time, energy or money. Now, I searched around for a while for a menu planner that fit my needs. In the end, though, it was easier to make my own so I could put in all the little odds and ends that I find useful.

I was walking through Costco today and a woman stopped to tell me how organized I looked with my list, so I knew I just had to share it with you! What makes this one so useful compared to other versions?

On Tuesday I promised you a recipe for my very favorite Fall kale salad, and I am here to deliver! I’ve been tweaking it for a while now, but I’ve finally settled on this version that leaves me perfectly satisfied all afternoon while making me dream of pumpkin patches and corn mazes and crisp, cool air. Feeling Fine Friday: 6 of the Best Fall Finds at Trader Joe’s

Feeling Fine Friday: 6 of the Best Fall Finds at Trader Joe's | This Miss Cooks

Look, there are any number of terms floating around now to describe the type of person who loves pumpkin and all things Fall, but I’m going to be a rebel here and call this tribe of (often) ladies simply Objectively Correct. Or maybe #ObjectivelyCorrect. Heck I’ll even settle for BASICally correct, if you catch my drift.

Now that that’s out of the way, welcome to the unequivocally best time to set foot into your local Trader Joe’s. I read the entire Fearless Flyer ad for this month cover to cover on my flight home and I STILL wasn’t fully prepared for the childlike glee that overtook me as I wandered the store (I did however stop myself from buying them out of every item labeled ‘pumpkin’ so that’s good at least). Here is my highly UNobjective list of what you should check out at TJ’s. Continue reading

Healthy Fall Recipes to Make on Busy Weeknights

Healthy Fall Recipes to Make on Busy Weeknights | This Miss Cooks

The leaves are turning, the smell of Pumpkin Spice Lattes is in the air, and I have heard the words Hocus Pocus mentioned at least once a day for the past two weeks. Friends, I do believe it’s Fall and I could not be any happier. Well, I suppose that’s a lie but I don’t think the human stomach was made to hold 15 boxes of Girl Scout cookies so I will settle for this.

I talked about how I’m crafting my Fall To-Do List recently, and I’m putting the finishing touches on it now. Think apple picking, corn mazes, pumpkin patches and some frightfully fun costumes come Halloween. Oh, and the most Autumnal-themed trip to Trader Joe’s you ever did see. More on that little interlude between me and the hallowed aisles Friday. Continue reading

4 Tips for Eating Healthy When Flying

4 Tips for Eating Healthy When Flying | This Miss CooksPhoto by Cole Keister on Unsplash

I’m writing this post on the road through Idaho with my future mother-in-law and 2 dogs on our way back to Portland. If you’re planning your own road trip, I have a few tips for keeping yourself healthy and sane from last week. My lab will be getting extra busy with experiments in the next couple of months, so I’m getting in most of my vacations in now. Which is why I will be jetting off on Friday (so soon!) to visit my sister in California and will need to brush up on how to avoid gaining 10 pounds in 3 days. Continue reading

Sunday Recap: Eating Healthy & Finding Balance on a Road Trip

Ladies and gents, this gal is in full vacation mode. We survived the 20+ hours in the car from our home in Oregon all the way to ski country, Colorado and we somehow avoided stopping at every McDonald’s on the way. I talked earlier this week about tips for eating healthy on a road trip and how to make sure you stay happy and sane without just aiming for the lowest calorie menu option. Continue reading

Cheap & Healthy Eats with Easy Bowl Dinners

Cheap & Healthy Eats with Easy Bowl Dinners | This Miss Cooks

Tuesday’s post was all about how I planned another week of effortless healthy meals without breaking the bank using the same handy little meal formula. You can really draw your inspiration from anywhere to make these One Bowl Dinners come to life: a stray ingredient you’ve been wanting to use, your favorite ethnic cuisine, a deconstructed version of a sandwich or wrap, and a leftovers clean-out are some of my favorite. Check out that post to see the general outline of what I put into every bowl to make sure it’s healthy, balanced and filling each time.

If you ever have a hard time coming back from the weekend full force in the kitchen, this Mexican bowl is just the thing come Monday night. The chicken was just made with some Instant Pot magic (chicken breasts + salsa = the best damn thing since sliced bread). Add in quinoa, black beans, chopped tomatoes & bell peppers, guacamole, Greek yogurt, and salsa and you’re golden.

Pro tip: Pre-make a large batch of your quinoa alongside the chicken over the weekend or on Monday night.
