Mexican Chopped Salad with Avocado, Black Beans and Quinoa

Mexican Chopped Salad with Avocado, Black Beans and Quinoa | This Miss Cooks

Am I the only one eternally struggling to find man approved vegetable based dinners? Now that I’ve got my own healthy eating habits on lock, I’ve set my sights on Mr Never Cooks’s diet. Granted, I haven’t been a total slouch and feeding him pizza while I eat my kale salads, but most days he ends up picking around something green in our dinners.

10 Best Overnight Oats Recipes for a Healthy Weekday Breakfast

10 Best Overnight Oats Recipes for a Healthy Weekday Breakfast | This Miss Cooks

Why is it that you’re seeing recipes for overnight oats everywhere recently? Well, do you ever go to sleep with the best intentions for a healthy breakfast only to wake up with zero motivation to make anything? Does this generally lead you to a pantry filled with pop-tarts, a freezer with a stray sausage muffin, or an overpriced slice of banana walnut bread at Starbucks? If you’ve been trying to eat healthier or save money on food, these are surefire ways to derail your goals. One of my favorite ways to stay healthy with as little effort as possible in the morning is to make overnight oats for the week. Continue reading

Ultimate Fall Kale Salad Recipe

Ultimate Fall Kale Salad Recipe | This Miss Cooks

On Tuesday I promised you a recipe for my very favorite Fall kale salad, and I am here to deliver! I’ve been tweaking it for a while now, but I’ve finally settled on this version that leaves me perfectly satisfied all afternoon while making me dream of pumpkin patches and corn mazes and crisp, cool air. Cheap & Healthy Eats with Easy Bowl Dinners

Cheap & Healthy Eats with Easy Bowl Dinners | This Miss Cooks

Tuesday’s post was all about how I planned another week of effortless healthy meals without breaking the bank using the same handy little meal formula. You can really draw your inspiration from anywhere to make these One Bowl Dinners come to life: a stray ingredient you’ve been wanting to use, your favorite ethnic cuisine, a deconstructed version of a sandwich or wrap, and a leftovers clean-out are some of my favorite. Check out that post to see the general outline of what I put into every bowl to make sure it’s healthy, balanced and filling each time.

If you ever have a hard time coming back from the weekend full force in the kitchen, this Mexican bowl is just the thing come Monday night. The chicken was just made with some Instant Pot magic (chicken breasts + salsa = the best damn thing since sliced bread). Add in quinoa, black beans, chopped tomatoes & bell peppers, guacamole, Greek yogurt, and salsa and you’re golden.

Pro tip: Pre-make a large batch of your quinoa alongside the chicken over the weekend or on Monday night.

Happy Labor Day weekend! I hope you’ve been able to kick back and take it easy for a few days, Mr Never Cooks and I are relaxing on the Oregon Coast with his family and the correct number of dogs (3).

How to Feel Healthy with Grapefruit & Egg Avocado Toast

I feel like it’s been a minute since I posted my first two quick and healthy avocado toast recipes but I’m finally here with the third and final one! I’ve been loving the orange & fig and mango & ginger versions on repeat for a while now, they’ve been the perfect breakfast for before a long run for marathon training or to help build muscle after a strength training workout.

For this last recipe I’ll admit that grapefruit is a tough nut to crack. Or I guess I should say fruit to peel? And peel. And then peel some more for good measure because we’re determined and foolish creatures with opposable thumbs and we want to win, damn it.

I might be new at the grapefruit game but I’ve been ridiculous and dramatic for decades.

Mango & Ginger Avocado Toast

Mango and Ginger Avocado Toast

The first time I tried to eat a mango at home I was convinced this fruit was just put on Earth as a cosmic joke to anyone who thought they could win in a man v. mango showdown. To clarify I was a grown adult at this point, so failing hard at the can-prepare-basic-ingredients test of life was a bummer.

Thankfully, 3 mangoes and 2 YouTube videos later, I was ready to make the messiest fruit salad you’ve ever seen. Continue reading

Orange & Fig Avocado Toast

I’ve been increasing my mileage for marathon training (finally) and one of the habits I’ve been trying to pick up is eating before a morning run. I’m usually an empty-stomach-maybe-some-coffee runner, so it’s been challenging to find something I enjoy eating beforehand. Which, by the way, is the only time you’ll EVER hear me say the words ‘I’m having a hard time eating more food.’

Enter: The Overnight Oat Experience.

You all might have noticed a…trend, shall we say, in my recipes. Can you even call it a trend when all you want to eat 24/7 is variations of the same meal? I feel like there are more accurate terms here, like obsession or craze or infatuation or having a bee in one’s bonnet (okay, I admit to using a thesaurus for that last one but I love it so it stays).  Continue reading

Dried Fig Overnight Oats Recipe

Dried Fig Overnight Oats

Last year I blinked and managed to miss all of fresh fig season, apparently. For a gal who had never tasted a fig until 3 years ago but is now a full fig convert, that was a brutal discovery. After that betrayal I’ve been on a dried fruit odyssey of sorts so that I’m not at the mercy of a teeny tiny seasonal window for my favorites. It only made sense for me to combine that with my love of overnight oats.
