How to Plan For a Healthy Vacation

5 Tips to Help You Plan For a Healthy Vacation | This Miss Cooks

This week has become filled suddenly with dinners out at our wedding venue, re-testing a few recipes from last week before they go up on the blog, and a family vacation over Labor Day weekend to the Oregon Coast. Work in my lab has picked up a bit as well, so I’m heading to the rental house a few days after my fiancé.

I put up a travel guide to Oceanside and the Oregon Coast last year, and I’m hoping that this trip will be just as rejuvenating. I’m lucky that Mr Never Cooks has a wonderful extended family who in fact do love to cook, drink some good wine, and play a few games of Spades long into the night.

One struggle I know many of my friends in the wellness world have is striking a balance with food and fitness that makes them happiest on vacations. Instead of a menu plan this week, I thought I might share some of the tips I use to maintain my health without ruining the whole idea of a vacation in the first place.

1. Begin at the End

Okay so that was a little confusing. What I mean is that you need to have a solid plan for after your vacation is over. I don’t mean a crash diet, a juice cleanse, or a punishing gym session. Continue reading “How to Plan For a Healthy Vacation”

3 Healthy Dinner Ideas From Costco

Sunday Recap: 3 Healthy Dinner Ideas From Costco | This Miss Cooks

I don’t think it’s a secret after my menu planning post for this past week that I’m a big Costco fan. Bulk groceries are my jam these days, especially since I’ve really started having an easier time making similar dinners every week with a bit of a twist to them each time.

If you’re trying to eat on a more limited budget, feeding a bottomless pit in your house, or trying to eat a healthier diet without spending too much time in the kitchen, meals like these will be life-savers and can be surprisingly doable at a notoriously expensive store like Costco.

I’ll be posting the recipe versions of these dishes soon, but the real beauty of them is that there’s not just one way to make them.

How to Feel Healthy with Grapefruit & Egg Avocado Toast

I feel like it’s been a minute since I posted my first two quick and healthy avocado toast recipes but I’m finally here with the third and final one! I’ve been loving the orange & fig and mango & ginger versions on repeat for a while now, they’ve been the perfect breakfast for before a long run for marathon training or to help build muscle after a strength training workout.

For this last recipe I’ll admit that grapefruit is a tough nut to crack. Or I guess I should say fruit to peel? And peel. And then peel some more for good measure because we’re determined and foolish creatures with opposable thumbs and we want to win, damn it.

I might be new at the grapefruit game but I’ve been ridiculous and dramatic for decades.

Orange & Fig Avocado Toast

I’ve been increasing my mileage for marathon training (finally) and one of the habits I’ve been trying to pick up is eating before a morning run. I’m usually an empty-stomach-maybe-some-coffee runner, so it’s been challenging to find something I enjoy eating beforehand. Which, by the way, is the only time you’ll EVER hear me say the words ‘I’m having a hard time eating more food.’

Dried Plum Overnight Oats Recipe

Dried Plum Overnight Oats Recipe | This Miss Cooks

I’ve been on an overnight oats kick recently (they’re just too darn easy) and knew I had to post the recipe for this one after a friend raved over them after breakfast. They’re perfect to grab before you head out on a hike or to mix up for early-riser guests.

And alright, let’s be real honest here. What I’m talking about is good old-fashioned, granny-come-lately, eat-it-for-your-digestion prunes. I was having a conversation with my future mother-in-law about how we had heard so many jokes about prunes as kids that we hadn’t even tried them until we were adults. I feel LIED TO. Plums are the most delicious food and taking some water out cannot change that immutable fact. Continue reading “Dried Plum Overnight Oats Recipe”

5 Meal Prep Tips & Blueberry Overnight Oats Recipe | This Miss Cooks

My Sunday meal prep time is a sacred thing, and it’ll be the topic of an ongoing series here on the blog. It’s what allows me to get so much done during the week, keeps me eating healthy, and prevents my grocery bill from going through the roof due to one unscheduled trip to Costco. This post is going to tackle the aspect that took me the longest to nail down: planning.
