The first time I tried to eat a mango at home I was convinced this fruit was just put on Earth as a cosmic joke to anyone who thought they could win in a man v. mango showdown. Sunday Recap from a Week of Easy Healthy Dinners

Moving, it turns out, is one of the most awful experiences that I’ve happily run headlong into. I now understand how my parents have lived in the same house for 35 years and I get why we couldn’t move to someplace nice like Minnesota or Maine (I was a boring child I think).

Throughout this month from hell, though, I realized that sticking to my healthy habits is key for avoiding some serious emotional breakdowns (mostly). I get hangry, I have sugar crashes, my acid reflux flares up at 2am if I eat too late, and don’t even think about asking me to move furniture if I haven’t eaten in the last 3 hours. I’m usually an empty-stomach-maybe-some-coffee runner, so it’s been challenging to find something I enjoy eating beforehand. I’ve been on an overnight oats kick recently (they’re just too darn easy) and knew I had to post the recipe for this one after a friend raved over them after breakfast. They’re perfect to grab before you head out on a hike or to mix up for early-riser guests.

And alright, let’s be real honest here. What I’m talking about is good old-fashioned, granny-come-lately, eat-it-for-your-digestion prunes. I was having a conversation with my future mother-in-law about how we had heard so many jokes about prunes as kids that we hadn’t even tried them until we were adults. I feel LIED TO. 10 Tips for Throwing the Post-College Dinner Party (That Your Friends Will Finally Make Time For) | This Miss Cooks

When I graduated from college a few years ago it became quickly apparent how difficult it was to keep in touch with friends as we all entered this crazy new phase of our lives. Moving to suburbs with no car of my own and a brand new 9-5 type job meant getting creative about finding ways to maintain these friendships.

Enter the weekly potluck dinner parties at my house! Complete with wine and beer, fun themed nights, and more laughter than I can recount. These dinner parties were the building blocks of my love for cooking, too. By the time I finished school, I was incapable of making boxed cake mix to save my life. (Side note: If you ever accidentally add twice as much vegetable oil to your Betty Crocker batter than what the recipe calls for, turn back now. It’s truly more gross than you could have ever imagined.)
