I feel like it’s been a minute since I posted my first two quick and healthy avocado toast recipes but I’m finally here with the third and final one! I’ve been loving the orange & fig and mango & ginger versions on repeat for a while now, they’ve been the perfect breakfast for before a long run for marathon training or to help build muscle after a strength training workout.
For this last recipe I’ll admit that grapefruit is a tough nut to crack. Or I guess I should say fruit to peel? And peel. And then peel some more for good measure because we’re determined and foolish creatures with opposable thumbs and we want to win, damn it.
I might be new at the grapefruit game but I’ve been ridiculous and dramatic for decades.

The first time I tried to eat a mango at home I was convinced this fruit was just put on Earth as a cosmic joke to anyone who thought they could win in a man v. mango showdown. To clarify I was a grown adult at this point, so failing hard at the can-prepare-basic-ingredients test of life was a bummer.

I’ve been increasing my mileage for marathon training (finally) and one of the habits I’ve been trying to pick up is eating before a morning run. I’m usually an empty-stomach-maybe-some-coffee runner, so it’s been challenging to find something I enjoy eating beforehand. Which, by the way, is the only time you’ll EVER hear me say the words ‘I’m having a hard time eating more food.’

Last year I blinked and managed to miss all of fresh fig season, apparently. For a gal who had never tasted a fig until 3 years ago but is now a full fig convert, that was a brutal discovery. After that betrayal I’ve been on a dried fruit odyssey of sorts so that I’m not at the mercy of a teeny tiny seasonal window for my favorites. It only made sense for me to combine that with my love of overnight oats.

I’ve been on an overnight oats kick recently (they’re just too darn easy) and knew I had to post the recipe for this one after a friend raved over them after breakfast. They’re perfect to grab before you head out on a hike or to mix up for early-riser guests.
And alright, let’s be real honest here. What I’m talking about is good old-fashioned, granny-come-lately, eat-it-for-your-digestion prunes. I was having a conversation with my future mother-in-law about how we had heard so many jokes about prunes as kids that we hadn’t even tried them until we were adults. I feel LIED TO.
